Colour is a property of matter which we detect through our eyes.
The colours we see when we look at an object are because of the interaction(s) that the object has with visible white light - mainly reflection and refraction.
These interactions mean that the light which comes from the object to our eyes is no longer "complete" white light (which contains all the colours of the spectrum) but light that has been changed in some way(s) so that not all the colours are "left".
